There is nothing better than a bowl of hot soup on a cold winter night. But, making soup can be time-consuming when you’re short on time.
I love keeping it simple when it comes to food because I don’t have a lot of time. I’m guessing you can probably relate.
This Crazy Simple Cauliflower Soup recipe might not look like much but it’s absolutely delicious! I once had a television producer tell me they weren’t sure about featuring this recipe on the show because it was just too simple to taste good.
Luckily, I was able to convince her and my office received emails for weeks afterward telling me how fast and delicious it was!

Crazy Simple Cauliflower Soup Recipe
(Serves 2)
INGREDIENTS
- 1 tbsp coconut oil
- ½ onion, diced
- ½ head cauliflower, chopped
- 2 ½ c water
- sea salt and black pepper to taste
DIRECTIONS
- Place coconut oil in large pot and sauté onion until slightly transparent.
- Add ½ c water and cauliflower and cover to steam for 10 minutes or until tender
- Add remaining water and bring to a boil.
- Reduce heat and simmer for 10 minutes
- Blend until smooth with immersion blender
- Add salt and pepper to taste and serve
SUBSTITUTIONS/ALTERNATIVES
- There are not a lot of ingredients here which means there aren’t a lot of alternatives. I strongly encourage you to try this soup just as it is before making any changes.
- You can also add a handful of carrots while steaming the cauliflower for more nutrients and a slightly sweet flavor.
- Drizzle olive oil on top for garnish or use honey instead for a sweet contrast.
