A HEALTHY, DAIRY-FREE EGGNOG RECIPE
(Serves 4)
INGREDIENTS
- 4 bananas
- 3 c coconut milk
- 1/4 t vanilla extract
- 1/2 t ground nutmeg
DIRECTIONS
- Add bananas, coconut milk, and vanilla extract to a blender.
- Blend until creamy.
- Pour into 4 serving glasses, and sprinkle nutmeg on top.
- Serve and enjoy!
TIPS/SUBSTITUTIONS
- Sub the vanilla extract for almond or rum extract.
- Toss in a dash of rum to make it an adult beverage.
- Sprinkle pumpkin pie spice on top.
- Opt for full-fat coconut milk to make the recipe creamier.
By swapping out your usual eggnog recipe with this one, you’ll save 200 calories and 35g of fat.
