(serves 1-2)

INGREDIENTS

  • 1 lemon, juiced
  • 1 banana, peeled and frozen
  • 1 c cauliflower
  • 2 T coconut butter or coconut manna
  • 1–2 T collagen peptides
  • 1 1/2 c unsweetened coconut milk
  • 1 t sea salt

DIRECTIONS

  1. Place all ingredients in your blender and blend until smooth. Enjoy!

  • Using pre-made cauliflower rice makes it much easier to blend up.
  • Add a handful of spinach for an even more impressive nutrient profile!
  • Sub the coconut butter for coconut manna for a little more sweetness.
  • If your coconut butter or coconut manna is too hard, try placing the jar in a boiling pot of water.
  • Add a dash of cocoa for a chocolatey kick!
