It’s Sunday! Whee! Time to get stuff done and food prep until it looks like a tornado went through your kitchen!

Food prepping is a great way to ensure you eat healthy this coming week and avoid those tempting foods that will leave your gut feeling yucky and very angry with you — looking at you pizza, chips, Chinese food!

We get it though, at times (especially when you’re busy), it’s hard to come up with new and exciting meals to food prep. If you’re like most, you fall into the habit of making the same things over and over. Now, where’s the fun in that?

We’ve taken the honor of rallying up 10 of our very favorite recipes to food prep for the week ahead! We kept them simple, delicious, and healthy so that you can have some food excitement and a happy tummy for the upcoming week!

Power Up Quinoa Salad Recipe

1. POWER UP QUINOA SALAD RECIPE

This salad is super easy to make! It’s packed with nutrients, it’s rich in fiber and protein, it’s easy peasy to digest, contains healthy fat, and helps sustain energy and blood sugar levels for hours!

Quinoa is also one of the highest protein containing plant-based foods, which makes it a great addition to vegan and meat eaters diets alike!

Naturally, quinoa is plump full of iron and magnesium (which is great for the immune system, digestive tract, bone, and heart health — can you say jackpot?!). However, quinoa also contains a substance called phytic acid, which can disrupt the absorption of these two powerhouse nutrients.

This recipe requires that you chop, throw the ingredients in the Instapot, close the cap, and let ‘er rip! Because we’re all about simplicity at ITN, we kept this recipe simple and easy to follow!
